Pineapple-Banana Nut Bread

This recipe was voted by my family as the best banana bread ever, with a bit of a twist, as the pineapple adds a lovely flavor to the bread!


One thing I always like to do with banana bread is add a bit of cinnamon and sugar to the base of the pan, which gives a nice crisp sweet taste to the bread when it is turned out.


And then I always sprinkle a bit more sugar and cinnamon on top too :)


Here is the Pineapple-Banana Nut Bread sitting daintily on a plate, with hungry bellies waiting for the first slice.   :)


And the recipe for you today... this recipe has become a staple in our home.  Enjoy!

PINEAPPLE-BANANA NUT BREAD

1-1/2 cups white sugar
1/2 cup butter, softened
3 eggs
1/4 cup oil
3 cups flour
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup pineapple juice (orange juice also can be used)
4 small bananas, mashed
1 cup pecans or walnuts, chopped
Mixture of 1 tsp cinnamon, and 1 tbsp sugar
Powdered sugar

Preheat oven to 350.  Grease and flour bundt pan.  Sprinkle mixture of cinnamon and sugar over the bottom of the pan.  Cream together the sugar, butter, eggs and oil.  Mix flour, baking powder, baking soda, salt and cinnamon together.  Add half of flour mixture to batter, mix well.  Pour in pineapple juice, mix well.  Add in remaining flour mixture, mixing well, then stir in chopped nuts.  Pour into bundt pan.  Sprinkle a bit of cinnamon and sugar over the top of the cake.  Take pan and hit firmly on hard surface to knock out any bubbles.  Place in heated oven and bake for approximately 45-55 minutes until toothpick inserted comes out clean.  Allow to cool for 10 minutes, and then gently turn over onto cooling rack.  Sprinkle liberally with powdered sugar.

  12. Hi MM! I make a pretty mean banana bread myself, but it only calls for two bananas. Yours calls for four? I bet it's so much moister than mine. Hmm. Love the idea of the cinnamon and sugar too. I'll have to try this sometime (I always wait for bananas to 'turn' too fast!) Thanks for sharing your family recipe!

  13. Very yummy looking. I would have to replace the sugar with perhaps Dextrose as I don't use sugar any more. It does look like a very nice bread. We grow lots of bananas and pineapples in our state of Queensland in Australia.

  14. No I haven't. I go by the recommendations on I Quit Sugar and I think agave is a no no on there so I usually use Rice Malt syrup, dextrose or stevia for sweetening. I don't bake much since my children are grown though.
