God's Valentine Gifts

Oh, the sunsets the Lord has been painting the skies with lately! This was His Valentine to me this week! Isn't it special! Riley and I were walking one evening as the sky's colors began to shift into this grand display. Oh, the wonder in my heart, and the praise on my lips to the Lord for His sweet blessings that come to me just like this. 





My husband delighted my heart with this beautiful tulip bouquet! 




This has been a strange winter with little snow. One morning this week, we had a skiff of snow overnight - and Riley and I were overjoyed!



It wasn't much snow as you can see, and it melted quickly, but still, it was pretty to see! 


You may remember this picture I shared last week. I sent it in to our local newspaper. The picture was taken over our neighbor's property. 


I was thrilled to see the picture on the front page of our local newspaper!

My husband and I enjoyed Saturday together,
with a meal at a restaurant for which we had a gift card. It was a delightful meal! 



OHH NOO! On Sunday morning, I went out to the chicken coop only to find my favorite rooster had been killed by a coyote. This rooster was a white leg horn, and he was able to fly in and out of the coop. It is always an issue that we face here - coyotes are opportunists. We haven't had an issue for a couple of years, because Ryan's dog Gus patrolled our property. Now that they have bought their own home, Gus isn't here as much (he comes with them when they visit). So, I have asked Ryan if we can "borrow" Gus for a few days to have Gus on yard patrol, and hopefully keep the coyote from snagging any more of my chickens. 



We had a Valentine's Day church potluck, and Dan requested that I make Southern Banana Pudding. He had a small bowl. I don't mind making yummy desserts like this when we can share them! It was a special treat, with fresh whipped cream - so good!

Our rescue cat loves stretching out in front of the fire. There's nothing more comforting on chilly days than enjoying the wood stove fire! We are so thankful he has made a full recovery from starvation when we found him in August. I have tried a couple of times to find him a home because we never intended to have 4 cats! But... he is still with us. I don't think he's going anywhere. We love him so much! 




The girls and I meet up as often as we can for coffee and a bit of thrift shopping, as much as the babies will tolerate! 


They came to my house after the babies were tired from shopping. Danika had fun putting on our shoes and walking in them! 


Baby Clara took a long nap with Gramma! Shopping is exhausting work! 



On our morning walk one day this week, several other neighbors were out walking with their dogs, and we enjoyed a fun walk with all of them! We live in such a wonderful neighborhood, and our neighbors are dear friends. Riley knows these dogs well, and they have such a good time together! 




Trying recipe variations with chia seeds.  This time, I used some coconut milk, chia seeds, blueberries, and a bit of allulose. I found that I didn't really care for the allulose. I think I will continue using my Sweet Drops stevia as a sweetener.  But it made for a fiber-rich sweet treat! 





I plan to pull out my seed starting supplies and start my pepper seeds, some spinach, lettuce, and pea seeds. It's hard to believe spring is just around the corner for us. We are getting some snow showers this week, but the days are getting longer (we gain 82 hours of daylight in February alone!), so any snow we get will melt quickly. I feel the anticipation in the air as the world around here begins to shift in exciting ways with spring's parade of blooms arriving before long. 

Are you feeling a shift towards spring in your world? Spring is always a time for celebration, and while I feel that we haven't really had winter yet, I am anticipating the delightful days of spring, even though winter seems to be finally making an appearance here, as we have gotten snow here all day. But that's okay, we need the snow!

    Lovely to see photos of you and your girls. Those little ones are so sweet.
    I hope having Gus around will keep the coyotes away from your chickens.

  2. Well, us NYers have had plenty of winter for you folks! :) Seriously I am SO over Winter although God has shown me many blessings during these cold, darker days.

    The grandgirls are just precious!! Glad you had time with both this past week.

    I've never used allulose . The sweeteners I tend to use are raw sugar, raw local honey or real maple syrup. We are actually trying to cut down on sweets here in our home (we love our desserts) but we totally ignored that plan for Valentine's night. If you read my FFF post you'll see what decadence we indulged in. My hubby needs to lose some belly fat and I just don't want to gain weight with desserts.
    So.....we are cutting way back now! We did make chia pudding for dessert a couple weekends ago. Dave wasn't a huge fan, it was pretty good in my opinion.

    1. Some people don't enjoy the taste of chia seeds, so if you blend in your blender the pudding, maybe he might like it better. My husband prefers it that way too. Yes, we won't be using allulose or any of alternative sugars, other than occasional stevia. We are just trying to eliminate sugar and sugar substitutes. I'm sorry you're getting such a rough winter, we haven't really had a winter here. Hoping springtime comes soon for you!

  6. This was just a wonderful post to read Marilyn. So full of happiness and Joy in the Lord. The photo of the sunset in your local paper was a lovely gift to you. I'm so happy for you that you get to have fun days with all of your girls. I wish ours lived closer to us, but they're spread all over the world. Sorry about the rooster. We have a Fox and coyotes in the field & ravine behind our condo. We keep a close eye on our small dog when we have her outside. They definitely are opportunists.
    We have a busy couple of days ahead. We're heading to the RV show in a little while, tonight is the fish fry at the local Catholic Church and tomorrow is the Valentine's dinner at church. Of course Sunday is always full and busy.

Yesterday we had temps in the high 40s (unheard of for us in Feb)....today we have snow, sleet, freezing rain and high winds....welcome back to our norm but disappointing after yesteday.   11. Marilyn, the skies are always so beautiful in your area. I'm surprised you got little snow so far. We had a big one this week, and it covered the neighborhood. What a precious picture of baby Clara sleeping with grandma. And it's so funny how they love to put our shoes on at Danika's age. Your wood stove fire looks so nice, and I've always wanted one, but my brother installed three heaters in the house. I'm grateful for the heat. A yummy banana pudding you made, and I'm glad your husband got to have a little. He's probably on a strict eating schedule right now. I'm sorry about your favorite rooster. Those coyotes are terrible. They got Nel's cat as well, and they were devastated. I'm happy to hear your photo was on the front page of your local newspaper.....and what a wonderful photo it is.     1. Oh I am so sorry to hear that the coyotes got Nel's cat! We lost our precious Simba to the coyotes too. We are loving our wood stove in this rainy winter we've had. The grandgirls are so precious, I love them so much! It is funny to see how they love to wear big shoes! Hopefully we do get more snow but, with February almost over, it is doubtful. I pray you have a blessed Lent season too! It is hard to believe how fast this year is going!

  12. Beautiful sunset, so neat to have it in the paper too, my hubby sent one of his photo's into the tv news station and they showed it, so that was neat. We too have been having many pretty sunrise and sets, I love in the quiet of the morning to watch it come up and thank him for such a lovely start to the day.
    We have had some very warm days that have gotten me excited for spring coming, this weekend we are back to winter temps and some are even colder than our normal but I do appreciate the warm days in there to remind us spring isn't too far off.
    So nice to have those days with the girls and grands, especially the cuddling :)

    Sorry for your rooster was taken by coyote, when I lived in my native hilltop home back then every single house had cattle and chickens and coyotes would visit at late night and take once in a while.our home wasn’t exception. Hope things get better when you have dog to patrol over the coop.🤞

  20. This is a wonderful post! So many good things! Spending time with the grandbabies is always a highlight for me! I've made chia seed overnight oats many times. They are so good and I agree, Stevia is the best sweetener! I'm so sorry about your rooster. We had 6 cats at one time, and I loved every one of them.
