St. Patrick's Day 30th Birthday Celebration!

We had so much fun celebrating Danielle's 30th birthday together! We did some shopping and ate lunch together. I bought Danielle a fun St. Patrick's Day headband.  Danika loved the headband and wanted to wear it too! 

 

She wanted to be just like her beautiful Momma! 



Danika loves to shop! She found a teddy bear almost as big as herself to carry around! 


And when she got tired, she found the perfect bench in the toy section! 


It was such a fun day! Danielle and I were talking about her 30th birthday. Danielle said she feels old, and I said I feel old too! Where have the years gone?! But we are thankful for every year the Lord has blessed us with, and that is how we have to look at it :) 



We had a windstorm come through our area, and after it passed, Riley and I took a walk to check on our acreage to see if there were any downed trees.  Thankfully, there were none! That is amazing, considering how long we had the winds, and so many around us lost trees. 



When we got home from our walk, I realized I had dropped a glove, so we had to retrace our steps, and finally found it just as I was about to give up! Right on the road, not long after I had stopped to put them in my pockets. I prayed as I walked, asking the Lord to lead me to the glove, because I had walked all over our property, and there was not enough snow to retrace my steps. Thankfully, the Lord answered my simple prayer! Not a big deal, but a small prayer. Answered! Thank you, Lord!



Springtime is making its entrance! Happy First Day of Spring! 



I went ahead and started some seeds! I counted out on my calendar 12 weeks to our first frost date, and that is the first week of June, from March 18. So these seeds will have plenty of time to grow before planting time comes. We can't plant up here until the first week of June due to late frosts that we often get. 



My Pampered Chef order has arrived! OOOH so exciting! I was able to get some new dishes! 


I absolutely love these cream-colored dishes. They have gently curved edges with a beautiful glaze, and are just so pretty. 



A recent meal prepared for some guests - I made chicken fajitas (using the seasoning recipe found in my cookbook). It was all so good. 



I will share the recipe for the chicken fajitas below. I cooked these fajitas in the oven, such a simple and wonderful way to make them! I usually double the recipe below and keep the seasoning in a jar to use as needed. 



FAJITA SEASONING MIX: 
6 tsp chili powder
3 tsp paprika
1-1/2 tsp cumin
1-1/2 tsp garlic powder
1-1/2 tsp onion powder
3 tsp dried oregano
3 tsp salt
1 tsp cayenne pepper
3 tsp sugar (optional) 

Mix all ingredients together and store in a glass jar. Use 1 pound of meat per 2 Tbsp seasoning. 

Chicken Fajitas: Place 1 pound of thin chicken breasts (slice breasts in half if thick) into a bowl. Stir in 2 tbsp fajita seasoning and 1 Tbsp lime (or lemon) juice. Mix well, cover, and let marinate for several hours in the refrigerator. When ready to cook, heat the grill to 400 and grill chicken until done, about 10-15 minutes. Slice chicken into thin bite-sized pieces and serve with heated tortillas, cheese, sour cream, guacamole, and salsa. 

Beef Fajitas: Place 1-2 pound skirt steak in a bowl with 2 Tbsp fajita seasoning and 1 Tbsp lime (or lemon) juice.  Mix well, cover, and refrigerate to marinate. When ready to cook, heat the grill to 400 and grill until done, 10-15 minutes. Slice steak and serve with heated tortillas, cheese, sour cream, guacamole, and salsa. 



I hope you are all enjoying a lovely start to Spring! We have been having beautiful sunny days and cool nights. The world around us is starting to "green-up," and trees, bushes, and even my tulips and daffodils are beginning to poke their heads above ground. We have been getting rain and snow occasionally, too, which has helped the awakening of the ground. Have a wonderful week, everyone!

  2. So good to know you girls had a celebration. I need to start my seeds as I might be able to plant outside by May15 if I look ahead to possible frost yet to come.   5. Hi Marilyn! Yes Spring is just around the corner! Glad you found your glove! Glad no trees blew down on your property. They are so precious... we hate to lose our trees! Has been pretty calm here (knock on wood) and a couple of sunny days which is such a nice break from the rain. Rain coming this week but next weekend supposed to be nice, and I want to go for a drive up along the Washington Coast and take in the views of the ocean. I LOVE being right at the beach with the smells of the sand, surf, seawood, mist, and of course the sounds of the Seagulls! My rose bush has leaves and a little petunia that is leftover from last summer, has come up to greet me and has little yellow flowers on it! My one blueberry bush is getting buds too! I'd better hurry and use up the blueberries I have in my freezer, which I have been doing diligently. Must make room for more! Oh.. and those fajitas look just absolutely delicious! And the Pampered Chef dishes are beautiful. I finally went to white dishes, so I can use "chargers" under them for the different holidays. I have some red ones, pink ones (of course), and gold ones. The white/cream dishes match any table covering which is a real bonus. You are such a good cook, you deserve to be pampered! Hugs... Marilyn

    1. So exciting that you get to visit the coast and walk the beach! Oh the joys! Thankful you didn't have any issues with your trees. One just never knows with these storms! Will be wonderful to have fresh berries again. I always freeze them, but love the fresh ones best. We do enjoy eating a lot of fajitas here, an easy meal to prepare. I'm glad to hear no trees fell during the windstorm. Like your area, we may get more rain and even snow in April. That's what the forecast says, so we'll see.   12. Danika is sooooo sweet!! Just adorable!

    My oldest daughter (32) said "mom i feel so....middle aged now" when she turned 30. (i was 63) so I told her no middle aged is ME, you're still young!

    YAY and praise the Lord for answered prayer regarding your glove.

    Spring is getting a VERY slow start here in eastern NY. My green stems and leaves for tulips have pushed through the ground but this morning was only 28 F and a dusting of snow was on the ground. again. But currently it's 48 and sunny so I was able to get in a wonderful walk.

I was chuckling that she feels old at 30 but I can also understand the weird transition from your 20's to your 30's. :) Our kids had 5 downed trees on their property from that wind storm. Nothing close to the house so that was good. We just had large limbs and a myriad of little branches and cones! Happy spring to you!

  16. Well Even though she is feeling old it looks like you all had a fun time celebrating.
    So nice to have had the area to start your seeds, I just don't have that here but am excited to buy some plants soon and get them in my garden :) Glad you didn't have any damage to your trees or home during the winds, I know we have had a lot of down branches and such during our wind storms.
    I have never tried cooking fajitas that way but it looks like it would be easy for a big group for sure.

    Spring is my favorite season and it's been a delight to see bluebonnets and I'm starting to see a few Indian Paintbrush too. Sadly, it's already getting hot (was 95 degrees several days ago), and our AC went out of our truck. Hopefully that can be fixed and my dad will be able to purchase what's needed.
    But I'm counting the blessings the Lord sends, and I'm so thankful for the pretty flowers. :)

  18. Nice St. Patrick's Day with family. Adorable daughter that liked to wear what you had. Of course, children like to get stuffed animals. My daughter Megan who is much older has a couple different ones. I like rabbits but I don't have real ones for years. I am glad you got help from the Lord as I do it often through the day. The lilac flowers with be budding soon. Mine is big and Megan has a smaller one that's starting to bloom soon. Have a good time with family and friends!

  19. Such a fun post to read. I know that you're close to the Canadian boarder but was still surprised at your late planting date. That makes for a short growing season.
    Your granddaughter looks so cute in her mommy's St Patrick (birthday) headband ☺️ what a cutie pie.
    You mentioned on my blog that you plant Scarlet runners every year. I bought some seed this year and was planning on planting them on the picket fence just as a flowering Vine. Do you have any tips on growing them. I assume they like a sunny space and was planning on fertilizing them with a scoop of steer manure, what's your opinion on that?

    1. Yes, we have very late frosts here (some oldtimers don't plant until Father's Day!). And we can often get frosts as early as the last week of August. So, having a greenhouse is really imperative here. I like the scarlet runner beans, they are very hardy. Yes, they like a sunny space, with lots of room to climb, and the steer manure would be great for them. I also use fish emulsion in my garden, as well as well composted chicken manure. They should do great!

  22. I am so happy Danielle had such a wonderful birthday with her sweet Mama and baby girl! What a beautiful day you all had together. I know what you mean. Zach turning 25 was just so amazing to me. I remember so clearly so much of his growing up years, and oh, how I wish we could just go back to then! But, time is an onward march, and we can't go back. We can only cherish this moment right in front of us and pray for God to give us many more. Little Danika is so adorable! I know she must fill your life with so much joy! I love Pampered Chef.
