Thankfulness... It is Enough

Thanksgiving 2017 has come and gone, now with its loving memories tucked inside our hearts.  We enjoyed a relaxing celebration this year.  It was just our family this year, which was really nice, because there was no stress of a certain time to have the food done!  We just ate when it all got ready. We made our family's simple favorites, and nothing fancy, well, except the pies!  My husband loves coconut cream pie, the kids love pumpkin, and I had a hankering for lemon meringue, so that is what I made.

These pies were made for Thanksgiving, but we broke the rules!
Friends stopped by for a visit, Thanksgiving 'eve and our family all agreed
it was not too early to indulge in a piece of pie together with our friends :) 

Lemon meringue pie was high on my list this year, oh was it ever good! 
While we were getting ready for Thanksgiving, I looked out my kitchen window to this scene. Oh the guilty parties!  Annie-girl wanted me to know she was innocent and absolved of all guilt, even as she appeared to oversee the whole incident, lol!


Thanksgiving morning, this gorgeous sunrise greeted us.  How thankful we were to see it,
after days and days of rain and gray cloud cover. 

The turkey was cooked to perfection, and we leisurely ate when all the fixin's were ready. 

We kept the meal quite simple since it was just the four of us.  Plus... all that pie was waiting! 

After the turkey was completely deboned, I put the carcass in the roasting pan, covered with water,
and simmered for about 12 hours to get a deliciously golden turkey bone broth.

When the last dish was dried and put away after the Thanksgiving meal, I noticed the world outside had turned crimson,
so Riley and I headed for a post-Thanksgiving walk.  Oh the colors were grand! 


It was as if there was a bowl of liquid gold in the skies! 

It felt so good to walk off the Thanksgiving meal and enjoy such beauty. 

And I supposed once I got back home,
that surely I deserved two pieces of pie after the brisk walk? Ha! 
After the turkey bones simmered for over 12 hours, I strained the broth, and poured it into freezable Mason jars,
leaving 1" headspace. I then separated leftover turkey into quart baggies to freeze with the broth.
This will make 3 pots of turkey bone broth soup.  No part of my turkey will be wasted.
I will feed the remnants of the softened turkey bones to the dogs for a special post-Thanksgiving treat for them. 
For Sunday dinner, I made my turkey bone broth soup with vegetables left over from our turkey dinner (carrots, corn and green beans), adding in a package of egg noodles. I also made homemade scones to accompany the soup.  So delicious! 

What was left of the pumpkins that I grew in my garden this summer was carried out for the chickens to enjoy. I planted Amish pie pumpkins and was very impressed with the beautiful thick puree they made and will definitely be planting them again next year.

We woke up to this beautiful sunrise this morning.  It was hard to get everyone back moving on a Monday morning after the
long relaxing holiday, but the sunshine and amazing skies were a lift to the spirit!

Riley and I walked this afternoon just as the sun's last warming rays of the day lit up the skies in pinks and purples. 

I never shall tire of the art gallery displayed in these skies, particularly in view of the sparse offering of color in a November world!
With November being the month that we stop to rest, think, ponder, and be thankful, I am glad that the season of Thanksgiving was truly just that, a time to be grateful, to ponder the blessings of the Lord in our lives and to know, without a shadow of a doubt, that we are blessed beyond measure.  

No life is without its pain, sorrow, disappointments and struggles - indeed so many at this time of Thanksgiving have more than their share of deep struggles, sadness, difficulty and health issues that overshadow their lives.  We don't live in a picture-perfect world.  

But one thing I have found, is that being grateful in all things really does bring a greater blessing into our lives than to spend our time wishing and desiring for more.  It seems that finding contentment in what we have will bring a greater blessing than even receiving all we desire.  

And so... I hope this season of thanksgiving doesn't end, but rather has simply just begun, and will continue on and overlap into the next season upon us... thankfulness... gratefulness for what we have.  It is enough.

  2. Your meal looks perfect to me. I also did just the simply Thanksgiving meal. We only had family and two of ours were sick so it was a nice day. Still a lot of work, but nice. Your photos of the skies are breathtaking. It is beautiful there!!

Oh, I loved your pictures of the pies (I have the same blue and white currier & ives dishes, btw), and your turkey...and the soup (wish I'd done that...) and the dogs digging...whatever were they finding? I hope that tree is still standing!!! But the SKIES...you have the most beautiful skies I've ever seen! Well, I know we all see the same sky...but somehow you must be closer to the heavenlies there in Idaho...that was just gorgeous! Thank you for sharing all of it...so much to be thankful for indeed! (Thank you for your visit to my place a little while ago!) Have a blessed Advent season now, preparing for Christ's Advent...perhaps His 2nd Advent is closer than we know???

  6. I love the misbehaving pups! That is so funny. Your meal looks delicious. It was just us for Thanksgiving as well. I am not used to a small holiday, but it was actually very relaxing as you said. We didn't eat our pies then night before, but we did eat them for breakfast through the weekend. You would think that I would've had my fill, but after reading your post, now I too want lemon meringue. Yum!

  9. Your dogs look like they were setting a course to dig a really big hole. I wonder what they were looking for? Those pies. Oh my! They look amazing! I took pies to Moses Lake, but then I left them there so they could enjoy them. I figured I didn’t need to be eating that much pie. Now I wish I had brought but just a little bit back home. Ha ha! Your dinner looked wonderful. I’m missing the fact I didn’t make a turkey this year for the broth. I just may have to get one and roast it anyway while the prices are still low.   16. Oh, my, those mischievous dogs! And, that Annie sitting there like she didn't have a care in the world! But, you could sort of see a bit of guilt in her eyes, couldn't you? They are such characters, and it is hard to be mad at them when they are so cute! So thankful you had a nice Thanksgiving Day, my dear friend. God is SO good, and we all have so very much to praise Him for, that's for sure. Those sunsets are just amazing! You capture them so beautifully...the photos are so amazing...I feel like I am there walking alongside you and Riley. Wouldn't that be so wonderful? What talks we would have, and I can just imagine that we would either break out singing together or praying...one of the two. It is hard to keep the praises in while surrounded with such demonstrations of God's power and glory and might!   19. Loving the colors in the sky! Great pics. Looks like you had a great Thanksgiving. Those pies look amazing. I had gastric bypass in Feb so this is my first Thanksgiving since then...the good thing, you can't eat much. The bad thing...you can't eat much! haha....

  22. Love all the pictures. So glad you had a wonderful Thanksgiving and your pies look so good! I love it that you save all you can for your turkey broth. I always try to save leftover broth and broth made from the bones of chicken, turkey and store it. So good for soups and etc. I was quite proud of myself as I did not overeat at Thanksgiving.   23. Marilyn, Loved seeing your Thanksgiving, what a wonderful day of Blessings(each day is)and a feast. Your pies look incredible! Glad you were able to share them with some friends. Your sky is so breath-taking. Glorious and it reflects His Glory. Your post made me stop and change my attitude to one of gratitude this morning....I was disappointed in not being able to go to a dinner social this coming weekend with friends from church....but I'm thankful for the friends and the fellowship I share with them.

  28. Hi Marilyn! My husband just boiled down our turkey carcass too, and we have eight jars of broth. He loves to make that. The photo of the soup and scones was so homey and warm...perfect for a chilly November day.
    It's funny you should mention being thankful in all things. That's the message our presider gave today at church. Blessings are easy to be thankful for, the hard stuff? Not so much. But God is in those too, and it's so important to praise him in our hardships.

We have 3 of our own and we're babysitting 2 and they love to dig as they're playing...we have lots of holes to fill this spring! :)

  32. Such a beautiful post, as always! I love the different pies you made....I just did apple and pumpkin pie squares (boy, were those good!). I am thinking about all the turkey carcasses I have thrown away without making soup broth with them!! I do it with roasted chickens and boy does it add a lot of flavor.

  37. The western skies have been so magical at sunrise and sunset this past month--your views and photos are beautiful, Marilyn! Your pies looked mouthwatering. I think I'd want a slice of each one. I also make turkey stock from the carcass. Sometimes I think I like the after Thanksgiving turkey soup even better than the turkey meal! What do you think your pups were digging for? Maybe voles?

  38. Hahahaha! Those dogs - that is hysterical!! Looks like you enjoyed some mighty fine 'eats' and yes, a wise decision to break out those pies in advance! I WISH I had not thrown my carcass out. As the men were cleaning up the kitchen, I told my daughter-in-law I SHOULD save that and just throw it in the freezer. Nope. Didn't do it. Shame on me!

  40. Oh my, look at those pies! Lemon meringue is a favorite. You have all the traditional Thanksgiving side dishes, and I see that your gravy is lighter, and that's how we make it too.   44. Such a beautiful post Marilyn! I meant to comment sooner but got carried away last week with packing to go to my son's place in Astoria, Oregon and didn't get back until Monday night. This week has also been hectic! Thus.. no post on my blog for over a month! I loved your photos here.. the pink skies are just beautiful. Used to have alot of those w hen we lived in LaPine, OR south of where we live now about 70 miles. What a different there compared to here. I don't know if it was the higher elevation or what, but the skies there were incomparable to anywhere else I've lived (except for where YOU live)!!! Your dinner looked wonderful. I made a small ham this year for just me and my hubby. Very small and simple dinner. When I make turkey, which is always for Thanksgiving, except this year, I always get every bit off the bone, give scraps to the cats, and freeze the white meat for sandwiches... then freeze the dark meat and smaller pieces for more meals. I also always freeze the gravy and mashed spuds, so we can have a few meals later on. I LOVE turkey sandwiches, so always like to stash away some white meat.

    Yes.. there are many things to be grateful for and many blessings in our lives. I've had some sorrow in my life (more than some) but I still try to look at the positive things that bless me every day.
