Here we are halfway through the month of February! As we celebrate the month of love, there are so many things around us to be thankful for and to love!

In my previous post, I shared my no processed sugar journey, and it continues! I am feeling so good. Being in the menopausal season of my life, hot flashes had become such a burden. I noticed a parallel between eating processed sugar, and then a hot flash. Since I've stopped sugar - no more hot flashes! Such a miracle! Thank you Lord! This Chicken Tortilla Soup has been a favorite meal we've enjoyed, as my husband is joining me on this no-sugar journey.

I love these two sweet darlings! They've got many nicknames, and right now my favorites are Little Girl and Big Boy! He weighs significantly more than she does, and he likes to throw his weight around. Sometimes though, she fires back - like when she is in my lap first, and resents his attempts to push her around to get the favored spot!

Was on my morning walk, and saw this unusual black streak in the sky. I guess we are all kind of watching the skies a little more closely these days! However, I was assured by those who looked at the picture that it was just a contrail left by an airplane. However, it did look quite unusual!

These are my homemade sourdough crackers, before I baked them. I forgot to take a picture after they were cooled. They are made from leftover sourdough starter, and with the dough left to ferment overnight, they make a wonderful lightly sour-tasting cracker that goes great with a cream cheese and tuna mix or just for a nice cheese and cracker snack.
Sourdough Crackers1 cup sourdough starter 1 cup flour of choice 1 tsp sea salt 4 Tbsp butter, melted, cooled 2 Tbsp dried herbs (I used a rosemary mix) oil (for brushing) coarse sea salt (for sprinkling on top)
Mix together the sourdough starter, flour, salt, butter, and herbs to make a smooth (not sticky), cohesive dough. Cover and let sit for 8 hours to 24 hours, your preference. I let mine sit overnight. You will need two sheet pans. Preheat oven to 350. Divide dough into two parts. Place dough on parchment paper, and roll out as thin as possible using a little bit of flour as necessary. Lightly brush dough with oil, and sprinkle with salt to preference. Cut dough into 1-1/4" squares. Prick each square with a fork to keep from rising. Bake crackers for 20-25 minutes or until lightly browned. Let crackers cook on wire rack, break apart and store in airtight container. Serve with a cream cheese spread, or with your favorite soup, or as a cheese and cracker appetizer. Makes about 100 crackers

It has a place to write down the names of all the birthdays in each month, and for cards to be made ready to send out. This should be very helpful!

They think I should sit in this chair all day long, and sit there and watch me, waiting for the time when all my day's work is done, dinner cooked, and the kitchen closed before I sit down. They really don't agree with this plan. {smiles}

You may remember "Wiley the Coyote" that I mentioned in one of my previous posts. He has been visiting our property regularly. The last three mornings I have seen his tracks and he has killed two turkeys. We are thankful at least he is eating turkeys - as he should. But I wish that he would just move on...

Over the last week, my heart has rejoiced to hear the news coming out of Asbury College in Wilmore, Kentucky. My heart is so full of hope for our young people in this college and other campuses across the world who are seeking the Lord. As the evil and darkness in our world seem to have no end to its evil depths, how exciting it is to see hearts crying out to the Lord, and lives being changed. I am praying for the gospel message to come out of this revival, and to be spread into every dark corner of this world! This scripture speaks to my heart about what the Lord is doing, even now!
Here is a link to a live stream of the ongoing services being held in Asbury. You can't see much, but you can hear their hearts as they repent, worship, and praise the Lord.
This scripture came to mind when I heard about this revival, and I heard it shared several times throughout the live stream link (shared above).
Joel 2:12-14
Yet even now, declares the LORD,
return to Me with all your heart,
with fasting, weeping, and mourning.”
So rend your hearts and not your garments,
and return to the LORD your God.
For He is gracious and compassionate,
slow to anger, abounding in loving devotion.
And He relents from sending disaster.
Who knows? He may turn and relent
and leave a blessing behind Him—
grain and drink offerings
for the LORD your God.
My prayer is that the sweet presence of the Lord would light upon your heart and family, drawing us all closer to Him, and that this revival that started on the college campus in Wilmore, Kentucky will spread all across our world!

The sourdough crackers would be so good with hot soups during the cold Winter days. And they are homemade, that's so special. **oh, that wasn't my white stoneware, that was a picture of the home shop that I go to every now and then. It's so charming, and the owner decorates it beautifully. She was closed the month of January, as she recently had three family deaths. I like to bring her a few goodies that I don't need or want anymore, so she can sell them at her shop or keep them. There's only a couple home shops in this mountain town, so I enjoy browsing for awhile haha.
Oh yes, I do remember now that you had visited the store, I do so love white stoneware, I have several pieces and I cherish them, would love a collection, but have nowhere to put them :) Thank you Sheri for your wonderful visit and comment that is always lovely to read! I am happy to share the pictures. The sourdough crackers are wonderful with a tangy flavor that makes them so good. February has been a good month here, indeed. DeleteHello dear Marilyn. Thank you for your message to me today. I'm still under the weather and I've not left the apartment since Monday morning. I missed the sweetheart dinner at church tonight, but Dennis took his mom, my sister, (who is a widow), and our daughter and Piper! He had lots of female company! He is a VERY good man. It's a fundraiser for the youth group, the only one they do all year and they do it right. It's been going on for 39 years! Even before we moved to Spokane. We worked with the youth for the first 9 years until we moved.
ReplyDeleteI loved your beautiful photos today. Evenings, mornings and mid-day. I love them all in the mountains. Our best friends celebrate their 29th anniversary tomorrow and they celebrated by driving to Newport for breakfast and then on to Sandpoint to do some exploring. We were texting as they were driving, (not the driver), and I gave them our breakfast order. :-)
The revivals do give a lot of hope. If even one soul is saved, the angels in Heaven rejoice so we should too. My prayer is that the true gospel message is given and not watered down or compromised, and that many come to a saving faith in the LORD.

Oh that is so funny! These gray cats are so funny, with such personalities! I bet you did drink a lot of tea in London - hot tea is something you can drink quite a bit of when its chilly! I like to drink just hot water when I've had enough tea/caffeine. Blessings to you!
DeleteOh my goodness, the first thing I will comment on is Asbury College. My 87 year old cousin graduated from there to go on and be a Home Ec teacher for decades. And then her son and his daughter also graduated from there. He is currently a teacher and his daughter is in Radio. Of course, Precious thinks Big Boy looks handsome, however she is jealous of how svelte Little Girl is. I really enjoy seeing the cards you are working on and the ones you have received. Tell Precious that Little Girl will be her friend as long as she keeps her "paws off" Big Boy {smiles} I'm sure they are all related somewhere along the line! Yes, the hot flashes have completely disappeared, after I realized that sugar was the culprit. Amazing! It is a worthy sacrifice to not have the hot flashes. So good to hear the no sugar has helped with the hot flashes, I have cut down but not given it up all together, we did that a few years back but it has crept back in a little at a time.

I did it last summer and it went so well for about 6 weeks, and then I fell off the wagon, and can't seem to get back on! I sure did feel so much better. Sugar addiction is so hard to kick. How are YOU managing it? Did you find anything to satisfy that sweet tooth without it being actually sugar?? :-) I know I did make some quick breads while I was doing it, using only almond flour and coconut flour, and would add only a tiny bit of wild unfiltered honey. I need to get back to that! My male cat is so much like your sweeties. He waits all day for me to finish all the chores and finally sit down in the evening. He follows me around like a doggie, if he's in the house, wanting me to sit down! And then he and my female sometimes fight for that coveted spot on my lap! Your two are hilarious! Your sourdough crackers look amazing. My husband always had a sourdough starter going, and he used to make bread all the time. But I couldn't eat it as was gluten free. He tried many times to make gluten free sourdough bread but it just didn't turn out well at all. His bread smelled so good! He also made lots of sourdough pancakes. He tried biscuits sometimes but they were always hard! As always your walks and views are stunning! Oh the purple skies up there are just unbelievable!

Firstly, thank you for the beautiful, beautiful card! I just LOVE it! It is hard to stay on the no-sugar journey. I did find a lady named Brenda Bennett who wrote several cookbooks, and she has some really terrific recipes! I also have watched a few "keto recipe" videos to give me ideas as well. I hope to do a post on some of the recipes I've tried. I definitely feel SO much better without eating sugar and high amounts of carbs. I eat fruits, veggies, some dairy and proteins, as well as lots of eggs, thanks to my chickens. It is amazing how real food satisfies, and I don't have the snack cravings. It is hard when eating out, I'll admit, but most places do have good salads for options these days. I am going to try your recipe for the mug cake, it sounds so delicious! I saw a company recently who says that they make sourdough that is gluten-free. I imagine they must use xantham gum or something else in it to help it rise. I can eat sourdough on this sugar journey, because gluten is not really my big issue, thankfully. The chicken soup really is wonderful, and you can also add heavy cream to it also, really "marries" the flavors. ReplyDeleteI love that Asbury is having this revival but my heart will REALLY rejoice when SECULAR universities (the Christians there) rise up and have revival! Now that will truly be something!! I pray this happens. One of my dear childhood pastors went to Asbury Seminary!
ReplyDeleteOOH....hot flashes. I didn't experience those when i went through menopause 10 yrs ago BUT i did experience night sweats. I used flaxseed oil with Omega 3-6-9 (a supplement) and it really helped cut down on those night sweats. Eating a mostly plant based diet works too for both. I pray you have an easy time transitioning to this next phase of life. God made our bodies and He will see you through it!!

Asbury college revival is wonderful, so many are coming out to be there, seems that many people are hungry for a move of God...We know of a revival in GA that has been going on for 7 weeks and I heard Lee college in Tenn is breaking out in revival as well. It does my heart good to hear how God is moving ! Hugs to you!
