Climbing the 50s Ladder

I'm on the 50's ladder and climbed another rung this week! Yes, I celebrated another birthday this past week, and it was such a special time for me. I'm grateful for the community of precious family, friends, and neighbors that we have, and it feels wonderful to bask in the love shared. The day started with an incredible sunrise, just for me! Thank you, Lord! 



Danielle had us over for a lovely dinner, and Alanna made my favorite, Huckleberry Cheesecake!

Some of the daily bounty coming out of my garden! Lots of zucchini, basil, lettuce, cauliflower, broccoli, and tomatoes are ripening. Thankfully, the frost has held off, and things are still doing well! 





Bandit loves to play in the chicken coop - and sometimes he tries to act like one too! Here he is trying to take a dust bath like the chickens! You can see one of the girls is NOT impressed {smiles} 



This picture was several weeks ago. Danielle is ready for the baby to come! October 1st is the due date :) 


The hollyhocks continue to astound me with their gorgeous blooms.



End-of-summer blooms in my garden are always so fabulous to see! 



We walked along the river this weekend as the sun was setting - a most glorious sight to see! 



A friend picked some wild apples, couldn't use them all, and gave some to me. I decided to peel some of them and make a small apple crisp. I decided to use pecans for the "crisp". Oh my! Dan declared it the best he'd ever tasted. Here is my recipe! 

Keto Apple Pecan Crisp

8 cups apples, sliced (tart apples best)
Dash of sea salt
1/2 cup sugar of choice, divided
1 cup pecans, roughly chopped
2 Tbsp flaxseed meal
1 Tbsp chia seeds
1/4 cup butter
2 tsp cinnamon, divided

Preheat oven to 350. Mix apples with salt, 1/2 tsp cinnamon, and 1/4 cup sugar. Place in 8x8 pan. Mix pecans, flaxseed, chia seeds, butter, remaining sugar and cinnamon together. Sprinkle over apples. Bake for 1 hour, or until apples are tender. Serve with whipped cream topping or ice cream of choice.

    Danielle looks great! That baby will be here before you know it. Our grandson is a month old today, but came 3 weeks early because of his moms Type 1 diabetes. But all are well. I'll be waiting for your big news!

    Happy belated Birthday to you!
    Well, now you know what dessert to prepare for making your husband happy!
    As for your cauliflower, next time for obtaining pure white and firm, solid ones, you have to fold over the big leaves around the cauliflower, just knack them for covering up! That makes them stay white and firm. You do that of course in time before they start sizing up.
    My Dad was called the Cauliflower King, he was a professional market gardener with green houses and also veggies out on the field.

    Oh my, soon you will become grandparents as the time is moving very fast.
    Our Tiggy–Tiger girl often went across the street to join the chickens in the chicken coop. They can befriend funny critters at times!

  6. Happy Birthday Marilyn! That huckleberry cheesecake looks incredible. And "huckleberry" has a very special meaning to me. Danielle looks sweet in this picture, and I love her blue dress! The apple pecan crisp looks good too. I love anything with pecans. I sometimes put them in my oatmeal. Your walk along the river sounds so peaceful, and look at that view! You have so many goodies from your garden this year. You work so hard tending to it, and when the time is right, good things sprout up for you. I wish you many more special birthdays in the years to come, Marilyn. : )

  7. Happy Birthday Marilyn. 50 is so very young...my oldest daughter turns 50 next year. I have never tasted huckleberry cheesecake but I think it could easily be a favorite of mine. sounds so tasty. Danielle looks beautiful and I know you all are waiting in great expectation. The music by Cody Cameron is so touching...absolutely beautiful... thank you for sharing. Your apple crisp is definitely something that my husband would love. Anything with pecans and apples is good....Enjoy this beautiful week.

Wonderful food, yummy looking cheesecake.. and your garden bounty is so awesome. Good thing the frosts held off. By now you may have had one! Your kitty is funny, playing with the chickens! And your sunsets there... oh wow..... stunning as usual. It's amazing how you manage to catch so many of them.
